While discussing in a circle I got all the details about all the possible symptoms to test purity of Ghee.
A technical person informed me that when you heat the ghee in a small bowl, it should be melted equally, means its all granules must be dispersed fairly at the samultaneously, and there should not be solid part remains at the bottom. If solid part remains at the bottom, it means there is "adulteration" and ghee is not pure.
And this happens in the Mother Dairy Ghee, whenever I heat it, it disperesd 3/4 into liquid with immiediate effect. But its 1/4th part remain solid at the bottom of the bowl. It needs to be checked. How FSSAI has approved this adulteration in the very well knwon brand of Mother Dairy. It is risk to the public, which increase many types of harmful diseases.
You must bring it to the public notice, and the department concerned, so that the enquiry can be made and fault at the packing of this ghee can be checked and defaulters can be punished.

I recently came upon a WhatsApp share where an adultrator who uses 1 litre milk to produce 10 liter milk using water, shampoo and a little sugar admits that due to non availability of any gainful employment they used this trick. He went on to claim that this spurious milk has all the qualities of milk including making paneer or khoya from it. So it is a dilemma as to how one can identify milk as being pure when reputed Government sector dairy resorts to adulteration. I have visited Mother Dairy plant in Patpargunj quite a few times with my students batches and the process is totally computerized and they have their own lab where stringent testing is done when milk comes from vendors and when processed milk is ready to be loaded into silos or packed in pouches. But if the ghee dissolves totally then there is no need to make the finger crooked ...seedhi ungli se ghee nikal jaye to ungli tedhi kyun karna? Right?

There should be a standard test prescribedby Beaureau of Indian Standards for all consumable products and Ghee is one of the most important one for human consumption. It is possible it could be adultratedin so many ways. In fact in Teples the public use Ghee lamps to lit in the temple and are very cheap. I am told that the ghee used is not good and is available in small packed containers from local shops. It is high time that the different makes of ghee are periodically tested and certified by proper agencies.

Conventional fragrance should be pleasant after heating Ghee, particularly Cow Ghee. No other test is required for pure Ghee other than above test of fragrance.
