Dear Chaya Ji: Your expression convey same meaning to others who commented. Anyway, I would respect your sentiment. Nevertheless we did have some fruitful and meaningfull exchanges and kept ourselves busy. I am not a specialist of any kind for sure. I am only a commerce and a law graduate (though never practiced or worked on law subjects), and am a generlist with firm and deep rooted belief in Indian systems, tested over thousands of years by generations of humans. Modern science with all its advancements is not closer to a millionth of Indian science. To cut long story short, I am always blindly in for home made items and cook and eat fresh, avoid storing as much as we can. I know this is not practically possible these days and reasons are far and many. I do fondly hope I have not offended anybody in my flare of writing. If anybody is offended I have no hesitation to say sorry. more  
I agree with Chhaya Taparia. All instant packed foods, infact all packed foods contain preservatives and other chemicals which are not only detrimental to food value of the product but also dangerous to the body in the long term. Good suggestion by Chhaya ji. more  
Thank you Mohna, mr. Subba Rao , you have misunderstood my question. What I wanted to know was the nutritional value of instant dry mixes in comparison to naturally fermented dough. I have never used that bazar made dough nor do i intend to use it. I am sorry for your wife if she is using it. more  
Now that you have clarified one segment of the qry, my view is: By far Indian standards of production has improved tremendously over last 3-4 decades. This primarily because they are being exported to USA & Europe in large quantities where FDA is harsh and standards are strict. SO WE ARE ALSO BEING BENEFITTED. For this, I am with you, that with the speed and style of life that we are all into, we have no alternatives. Hence we can quiet confidently go in for the standard products, although strict quality controls are not maintainable in India due to bureaucracy and very poor governmental monitoring equipment. While on the same subject, it is highly providential decision to go by the certification(s) of international certifying agencies like SGS, BVI, ISO, ISI etc, for the kind of staff they engage to save on costs and the dismal records they maintain as compared to their peers or parents in the developed world. As face them quiet frequently, I am aware of their behaviour and attitudes. ALL OF THEM ARE HERE TO MAKE MONEY. At the end, there is no alternative to what you can make at home from the products that we can have. Unfortunately, if any house dares to do that, that house is considered as backward and not progressive. On the same note it is a matter of pride for the ladies to announce/declare, wherever possible eg., kitty parties to say where they do shopping and which malls they belong to. Attitudes and styles are changing and all new generations invariably adapt that is what is progression. more  
Instant mixes do contain soda/fermenting agents, which are artificial. Nothing can be compared with naturally fermented dough. It hardly takes 10-15 mins. to grind rice & dal at home in a grinder. more
